How to do a raw carrot cupcake:

The bottom:
1 large carrot
2 dl of raisins
1 dl of walnuts
8 dates
2 tps of cardamom

Mix all the ingredients in a food prosessor and after that do you put the batter in papper molds. Fill them so the molds are half filled. It helps if you have a muffins form.

The glase:
½ dl of walnuts
½ dl of cashews
1½ dl of water
1 dl of raisins
2 tsp of cinnamon
4 dates

Mix all the ingredients with a handle mixer and then cut a hole in the corner of a small plastic bag then put the batter in the bag and then pip the batter onto the bottom batter. Then put it in the freezer for 4 hours, and then you can enjoy it. Please comment and say what you think of my own recepie of carrot cupecakes.
